From The Tsukubai Tea Ceremony for Ring-tailed Masked Bandits by Raku Yu-an:
"...turn the pastry admiring the flaky richness, dip and swish, then turn again so that the tasty filling is facing the other guests around the tsukubai. Dip and swish again and nod to the neighbors across the tsukubai, then take a bite... DELICATELY... Do not gobble like a pheasant...."
